Pale gold straw in colour. This wine displays lifted aromas of apple blossom, caramel and honeydew melon. Fresh white nectarine and ripe quince carry onto the palate with bright fruit intensity and modest oak structure with vibrant minerality. Delicate hints of hazelnut are delivered by 11 months maturation in French oak.
- Winemaking Notes
The fruit was picked at optimum ripeness in the cool of the night. Of the free-run juice, a portion was wild fermented in both new and aged French puncheons, plus a portion was fermented in stainless steel to maintain the lively fresh fruit characters. The combination of premium fruit parcels together with the use of different oak has given the wine a lovely round palate, while maintaining its natural acidity and structure. The wine matured for 11 months with regular stirring, before final blending and bottling. The resultant wine is a well-balanced, elegant modern Chardonnay.
